Crafted as a collaboration between 7 Fjell and Solo, Daidalos is a mahogany-hued Belgian Dark Strong Ale that bridges Nordic brewing precision with Cretan influence. The sensory profile opens with a complex, fairly intense bouquet of caramel, leather, and soft vanilla, accented by yeast-driven notes of ripe banana and dark stone fruits. On the palate, a rich foundation of fudge and toasted malts is complemented by light phenols and the unique addition of carob powder, which imparts an elegant, earthy depth reminiscent of hot chocolate. Despite its 7.8% strength, the beer maintains a sophisticated balance, concluding with an uncharacteristically dry and refined finish that belies its initial malt sweetness.

Appearance. Mahogany to deep coppery-brown (approx. 18-22 SRM). It features a huge, dense, and persistent light tan head with excellent lacing. The clarity is clear to brilliant.

Aroma. High intensity with a complex mix of rich, bready-toasty malt and dark caramel. Prominent esters of plum and banana are present, alongside spicy phenols of vanilla and leather. A subtle, earthy chocolate note from the carob and soft, perfumy alcohol are well-integrated.

Taste. Rich maltiness featuring flavors of fudge and caramel. Low to moderate bitterness provides balance to the malty depth. Significant yeast character presents as light phenols and fruity esters. The addition of carob powder contributes a distinct cocoa-like nuance, leading into an elegant, moderately dry finish with lingering notes of dark fruit and malt.

Mouthfeel. Medium-bodied with a smooth, creamy texture. High carbonation provides a lively lift on the palate without being sharp. A noticeable but well-integrated alcohol warmth is present, with no harshness or astringency.
