Interstice II is a potent Double IPA that showcases an assertive profile of ripe stone fruits and resinous depth. A collaboration between craft powerhouses, this ale delivers high-intensity aromatics of mango, apricot, and nectarine, characteristic of modern New World hop varieties. While the mouthfeel is initially perceived as soft and round, the palate quickly shifts toward a bright display of lemon zest and tropical richness. It concludes with a firm, long-lasting bitterness and sticky hop resin, staying true to the style's demand for massive hop impact and high drinkability without the heavy residual sweetness of a barleywine.

Appearance. Pours a deep gold to light orange (7-10 SRM) with good clarity, though a light chill haze may be present. Topped by a moderate, persistent, off-white head with excellent lacing.

Aroma. High intensity hop-forward bouquet featuring prominent ripe mango, apricot, and nectarine. These stone fruit notes are underpinned by a sharp, resinous hop character and a very low, clean, neutral grainy malt presence. Fermentation is clean with only subtle fruity esters.

Taste. Initial impression is a burst of tropical fruit and stone fruit flavor, specifically mango and nectarine. Moderately high bitterness is immediately apparent, cutting through a soft, bready malt backbone. The finish is characterized by refreshing lemon zest and a long-lingering, resinous hop aftertaste. Dry and clean on the finish with no harshness.

Mouthfeel. Medium-bodied with a smooth, round initial texture that transitions to a crisp finish. Carbonation is moderate-high. A well-integrated, smooth alcohol warmth is present but remains restrained.

Voici Interstice 2, Double West Coast à 8% brassée en collaboration avec nos amis de Toronto Blood Brothers Brewing et nos jumeaux de Milton Third Moon Brewing.

Au nez on retrouve beaucoup de fruits exotiques et fruits à noyaux très mûrs avec de la résine de houblon.

Le corps de la bière est assez rond initialement.

Au goût, la bière est vraiment fruitée : beaucoup de mangues, d'abricots et de nectarines, suivi par des zestes de citron une fois la gorgée passée.

La finale est bien amère et la résine de houblon persiste longuement en bouche.
