This collaborative Double IPA presents a saturated sensory profile driven by an intensive dry-hopping regimen. The unconventional addition of quinoa, chit malt, and a heavy dose of oats creates a plush, opaque foundation that carries the high-intensity hop character. Utilizing Citra and Amarillo at knockout for biotransformation, followed by a continuous four-day dry hop of Citra cryo and Amarillo cryo, the beer radiates aromas of ripe orange, mango, and resinous grapefruit. On the palate, the Amarillo T90 provides a firm bitterness that balances the soft, cereal-like graininess of the grist, finishing with a lingering citrus zest and clean warmth.
Appearance. Deep gold to light orange-copper (7 SRM). Opaque clarity with a dense haze from the high protein content of the oats and quinoa. Large, creamy, persistent white head with excellent lacing.
Aroma. Intense, pungent hop aroma dominated by tropical fruit (passion fruit, mango) and citrus (tangerine, ruby red grapefruit) from Citra and Amarillo. Background notes of sweet cereal grain and a subtle floral, spicy lift. Clean fermentation profile with a very light, smooth alcohol presence.
Taste. Strong, layered hop flavors of citrus peel, nectarine, and tropical juice. Initial impression is fruity and soft, transitioning to a moderately high bitterness that is firm but not harsh. The malt character is supportive and bready, reflecting the oat-heavy grist. The finish is medium-dry with a long, resinous, and fruity aftertaste.
Mouthfeel. Medium-full body with a notable silkiness and creaminess from the oats. Moderate carbonation. A soft, restrained alcohol warmth is present at 8% ABV, but it remains well-integrated without astringency.
