3 Sons Brewing Co. Even Caramel Sundays

Even Caramel Sundays is an opulent Imperial Stout that showcases a masterclass in barrel integration and adjunct layering. Following twenty months in Heaven Hill barrels, the beer reveals a deep, spirit-forward complexity characterized by oak-derived tannins and rich bourbon warmth. The sensory experience is dominated by the deliberate additions of decadent chocolate and smooth vanilla, which provide a creamy, confectionery backdrop. These elements are bound together by a lush caramel sweetness that evokes burnt sugar and toffee. This collaboration with Equilibrium delivers an intense, dessert-like profile where the high alcohol content is seamlessly integrated into a thick, velvety tapestry of roasted grains and dark fruit.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thin, dark mocha-colored head that shows low retention due to high alcohol and viscosity. Pronounced legs are visible on the glass when swirled.
Aroma. High intensity with a rich bouquet of bittersweet chocolate, Madagascar vanilla bean, and sticky caramel. The Heaven Hill barrel influence is prominent, contributing notes of charred oak, coconut, and a gentle bourbon spirit character. Subdued esters of dried figs and prunes linger in the background.
Taste. Intense initial impression of liquid fudge and salted caramel. The mid-palate introduces layers of dark chocolate and vanilla cream, supported by a sturdy roasted malt backbone that provides hints of espresso. Hop bitterness is moderate but mostly perceived as a balance to the heavy sweetness. The finish is long and warming, featuring lingering notes of oak and bourbon-soaked wood.
Mouthfeel. Very full-bodied, thick, and viscous with a chewy, motor-oil texture. Carbonation is low, enhancing the luscious and velvety mouthfeel. Significant alcohol warmth is present but remains smooth and well-integrated without being harsh.
