1989 Brewing DINOMYTE
Dinomyte is an assertive Double IPA that emphasizes a complex and modern hop profile driven by Talus and Amarillo Cryo. The aroma is a vivid tapestry of pink grapefruit, dried rose petals, and resinous pine, supported by the concentrated citrus-oil punch of the Amarillo Cryo. On the palate, the hop intensity remains high, layering tropical guava and herbal sage over a lean, neutral malt backbone. The beer finishes remarkably dry and crisp, with a firm bitterness that cleanses the palate. It exemplifies the contemporary approach to the style, prioritizing high drinkability and hop saturation without the syrupy sweetness of traditional high-gravity ales.
Appearance. Pale gold to light copper (6–10 SRM). Displays good clarity with a faint, acceptable haze. Features a moderate-sized, persistent white head with fine-textured lacing.
Aroma. Intense hop aroma with dominant notes of grapefruit, orange zest, and distinct floral rose. Secondary layers of tropical guava, cedar, and pine resin. Supportive malt is low, neutral, and grainy. Clean fermentation with a very subtle, smooth alcohol presence.
Taste. Strong, complex hop flavors of citrus rind, geranium, and tropical fruit. Moderately high bitterness that is firm but lacks harshness. Malt character is low and unobtrusive, providing a clean, soft foundation. The finish is dry to medium-dry with a lingering, hoppy aftertaste of pine and citrus.
Mouthfeel. Medium body with a smooth, creamy texture. Medium-high carbonation provides a lively spark on the tongue. Features a restrained, smooth alcohol warmth without any harsh hop-derived astringency.
