This Wild Specialty Beer presents a stunning ruby hue, reflecting a complex infusion of Korean Bokbunja and pomegranate. The aroma is a vibrant bouquet of tart dark berries and bright citrus notes, layered with floral rosehip and a delicate dusting of Ceylon Cinnamon. On the palate, a crisp tartness leads, supported by a rustic grain bill of Korean Spelt and sticky rice. Saison yeast provides a peppery, clean foundation that carries the fruit through to a bone-dry finish. Effervescent and refreshing, it masterfully balances earthy spice with a sharp, vinous acidity and lingering berry skin tannins.
Appearance.Deep ruby to garnet (15–22 SRM); moderate pink-tinted head with fair retention and light lacing. Slight haze is present due to the use of Korean Spelt and wheat.
Aroma.High intensity. Dominated by tart Bokbunja (blackberry) and tangy pomegranate. Secondary notes of floral rosehip and a subtle, sweet woodiness from Ceylon Cinnamon. Fermentation character includes light peppery esters from the Saison yeast and a clean lactic acidity.
Taste.Sharp, refreshing tartness immediately hits the palate. Strong fruit presence of Korean Blackberry and pomegranate provides a vinous quality. The Ceylon Cinnamon adds a warm, spicy complexity without being overbearing. Minimal hop bitterness; the balance is decidedly acidic.
