This Saison bridges tradition and modernity, utilizing local Korean wheat and spelt to create a soft, rustic base. The addition of premium Korean Woo-Long tea elevates the profile, weaving delicate aromas of blooming white flowers through a tapestry of spicy, peppery yeast character. On the palate, the tea introduces a sophisticated umami depth and a subtle earthy complexity that complements the style’s characteristic high attenuation. Effervescent and bright, the beer finishes with a clean, refreshingly crisp snap, leaving a serene, floral trail. It is a graceful interpretation of a farmhouse ale where the cereal grains and tea leaves find a harmonious balance.
Appearance.Straw to pale gold (4–6 SRM). Topped by a dense, rocky, long-lasting white head with significant Belgian lace. Unfiltered with a slight, soft haze characteristic of high wheat and spelt content.
Aroma.Moderate to high intensity featuring a complex blend of white flowers and jasmine from the Woo-Long tea. Estery notes of pear and citrus peel are balanced by a prominent peppery phenol. Low grainy-sweet malt character from the wheat and spelt provides a rustic foundation, accompanied by a light earthy tea aroma.
Taste.Initial grainy malt flavors of bread and nuts from the spelt lead into a mid-palate of citrus esters and cracked black pepper. The Woo-Long tea infusion provides a distinct floral elegance and a subtle umami depth. Hop bitterness is moderate but appears firm due to the very high attenuation and bone-dry finish. The aftertaste is refreshingly bitter with lingering notes of tea and spice.
Mouthfeel.Medium-light body with a soft, creamy texture provided by the cereal grains. High carbonation creates a lively, effervescent sensation. No perceptible alcohol warmth; very clean and crisp with negligible astringency.
