Tsypa Brewery’s take on the classic Gose is a refreshing, savory experience centered on a crisp, lactic tartness. Built on a foundation of Pilsner and wheat malts, the beer offers a doughy, bready backdrop that supports the vibrant additions of salt and coriander. The defining characteristic is the addition of pickled cucumbers, which imparts a bright, briny, and herbal garden aroma. On the palate, the cucumber essence melds seamlessly with the citrusy lemon notes of the coriander. Highly carbonated and effervescent, it finishes bone-dry with a mouthwatering salt-tinged finish that invites another sip of this cooling, rustic ale.
Appearance. Yellow color (3-4 SRM), unfiltered with a moderate to full haze. Moderate white head with tight bubbles and good retention. Highly effervescent.
Aroma. Moderate intensity. Clean lactic sourness with light bready wheat malt. Fresh, citrusy coriander notes resembling lemon peel are prominent, accompanied by a distinct savory pickled cucumber aroma and a faint hint of sea salt.
Taste. Initial impression is bright and tart. Noticeable medium-low sourness balanced by doughy pilsner and wheat malt flavor. The character of pickled cucumbers is clear but well-integrated, supported by citrusy coriander. Light saltiness is present on the tip of the tongue. Very low bitterness with no hop flavor. Dry, fully-attenuated finish where acidity provides the balance.
Mouthfeel. Medium-light body with high, effervescent carbonation. Salt provides a mouthwatering, slightly tingly quality and a rounded texture, while the acidity keeps the beer from feeling heavy. No alcohol warmth.
