This version of Dookit’s Southside Pale is brewed with Chinook and Pilgrim hops. Chinook provides some fruity notes, Pilgrim balances the beer with smooth bitterness and zesty citrus.
Dookit say “Southside Pale is to become our first core range beer. Always available and always refreshing. A beer with balance between light malty caramel sweetness and fragrantly fresh hops. The hops may swap as we strive for the freshest and most interesting ones on the market, but the grain bill, water profile and hop schedule remain the same.
“The latest fresh batch of Southside Pale uses the same hops as before: UK grown Chinook and Pilgrim. No changes apart from upping the Pilgrim in the dry hop. The bittering hop was smelling too good to not experiment with in the later stages. The result is a heightened lime-citrus quality to the already orange-zesty profile. The Pilgrim hop has now proved itself as not only great but versatile too!
“For those who haven’t tried the Southside Pale you can expect a beautifully balanced pale between tropical and citrus fruits, and a clean malty sweetness. Our core range pale is back with a bang and a spring in its step. Showcasing the best hedgerow hops around: Bramling Cross and Goldings, it is remarkably refreshing and delightfully delicious. We all love our juicy hazy pales packed full of new world hops, but let’s not disregard hops closer to home. With a bit of creativity and attention to detail (mainly biotransformation and very large hopback additions!) a similarly smooth and fruity pale ale can be produced.
That is exactly what is achieved in this latest batch of Southside Pale. It celebrates those hops closer to home and proves they’re worth a seat at the table. Honey-like and tropical esters abound in this jammy and aromatic little pale. From the Bramling Cross a lemony fruit bowl manifests itself, filled with loganberries and blackcurrants, while the touch of Goldings provides a subtle floral, earthy and spicy note. And more: the Saturated yeast (a London Ale 3 clone) from WHC impressively brings about candied pineapple and mango flavours. So New England IPA lovers will love it just as traditional English IPA drinkers will too.
