De color marrón oscuro. Presenta una corona de espuma cremosa y una graduación de 9º.
De cuerpo mediano la Chimay Bleu es fuerte y compleja. Aromáticamente destaca la levadura fresca y un cierto aspecto floral. En boca detectaremos un toque especiado y un fondo de caramelo y malta tostada
Ante todo, se distingue por su carácter de cerveza fuerte. El aroma de levadura fresca asociado a un ligero tono floral rosáceo es particularmente agradable. Su sabor relativamente seco deja una agradable nota, que la hace especialmente refrescante cuando se consume fresca (10 a 12 ºC). A temperatura ambiente, libera toda su fuerza y resulta buena para el cuerpo y el espíritu. Estilo: Trapista Color: Marrón oscuro Ingredientes: Agua, cebada malteada, trigo, azúcar, lúpulo y levadura Aroma y cata: Sabor potente y complejo con un regusto a especias y caramelo. Auf der Welt gibt es 6 Trappistenklöster, die besondere und beliebte obergärige Starkbiere brauen. Trappisten sind die schweigenden Mönche. 5 Trappistenklöster in Belgien brauen Bier und eines in den Niederlanden. Es gibt in Belgien viele Klosterbiere (Abteibiere), jedoch nur solche dürfen ihr Bier „Trappistenbier“ nennen, wenn das Bier noch von Trappistenmönchen im Kloster gebraut wird.
Folgende Trappistenklöster gibt es noch in Belgien, die Bier brauen:
Orval, Rochefort, Westmalle, Westvleteren und Chimay.
Chimay ist bei weitem das international bekannteste Trappistenbier. Grande Réserve, ein Jahrgangsbier, ist mit 9% vol Alkohol das stärkste Bier des Klosters. Es ist sehr würzig und erlangt nach 5 Jahren (!) portweinähnliche Noten. Um sein volles Aroma zu entfalten, trinkt man dieses Bier bei ca 12 Grad aus einem kelchähnlichen Glas.
Chimay wird immer nach dem deutschen Reinheitsgebot gebraut.
Angeboten werden die Biere in 0,33 und 0,75 Flaschen sowie mit einem Alkoholgehalt von 7%, 8% und 9%.
Zum obergärigen Chimay passt vorzüglich der Trappisten-Käse, der auch im Kloster hergestellt wird.

In questa birra si può percepire distintamente il profumo del lievito, di spezie invernali (noce moscata e chiodi di garofano), insieme ad un aroma floreale, erbaceo (timo), di frutta rossa, caramello e malto tostato.
Corpo e struttura impressionanti, con un sapore intenso dove vengono accentuate le piacevoli sensazioni percepite in aroma, rilevando un leggero ma piacevole tocco di malto torrefatto, liquirizia e caramello.
Si aggiungono inoltre, se la si lascia invecchiare, note vinose che possono far ricordare uno Zinfandel, per non dire un Porto se la si lascia maturare per 4 o 5 anni. Una birra di prim’ordine con un lungo retrogusto di caramello.
Nelle bottiglie da 75 Cl. la Chimay Blue è indicata con l’appellativo di Grande Reserve, nella versione da 150 Cl. viene chiamata Grand Reserve Magnum, nella versione da 300 Cl. viene chiamata Grand Reserve Jeroboam e nella versione da 600 Cl. viene chiamata Grand Reserve Magnum Mathusalem.
Durante il confezionamento viene millesimata, appare cioè sull'etichetta, ben evidente, l'anno in cui è stata prodotta, in modo che l'intenditore possa calcolare i 24 mesi necessari a questa birra per raggiungere il massimo delle sue qualità che è comunque in grado di conservare per altri tre anni.
