A história da Chimay começou em 1850 quando o sacerdote de Virelles, padre Jean-Baptiste Jourdain, e o príncipe de Chimay, Joseph de Riquet de Caraman, confiaram uma missão a um pequeno grupo de monges de Westvleteren: fixar residência no planalto de Scourmont com o objetivo, então como agora, de “apoiar a região de Chimay”. Para isso, decidiram fazer cerveja com a água em abundância disponível no planalto pantanoso, o primeiro batch foi produzido em 1862. Posteriormente, também passaram a produzir queijo, que é aliás o match perfeito para a Chimay. O conhecimento cervejeiro foi transmitido de geração em geração de modo a garantir que os princípios de Chimay são sempre respeitados. Hoje em dia é uma das 5 cervejeiras belgas que pode exibir o selo “Authentic Trappist Product”. Recomendamos vivamente uma visita à Abadia de Notre-Dame de Scourmont. Ficha Técnica

Chimay Triple remonta a 1966. Mas foi lançada em garrafa de 75cl para comemorar o 500º aniversário do principado de Chimay em 1986. E é por isso que em garrafa de 75 cl também é conhecida como Chimay “Cinq cents” (significa 500).
