Cantillon Nath è un lambic al rabarbaro dedicato a Nathalie, moglie del birraio, da cui prende il nome.
Ottenuta dal blend di lambic di 1–2 anni con aggiunta di rabarbaro in macerazione, nasce come evoluzione delle prove di rhubarb lambic presentate negli Zwanze 2008 e 2012 poi affinate fino al debutto della versione “Nath” nel 2017. Nel bicchiere è giallo dorato carico, talvolta verso l’ambrato chiaro, con schiuma fine e fugace; al naso emergono note vegetali/terrose di rabarbaro, legno, cuoio “cantina” e agrumi; al palato è secca e vivamente acida, con una lieve astringenza erbacea del rabarbaro che asciuga il finale.
