Ca' del Brado Anniversario 2020

Mixed-fermentation sour ale infused with local herbs and spices, fermented with Brettanomyces Lambicus yeast, and blended with a small amount of vintage saison.

The base beer underwent primary fermentation using Brettanonyces Lambicus and then matured in wooden vats with different characteristics - including second-passage brandy barrels - for a period of about 8 months, evolving through the microbial flora of Ca' del Brado's cellar before the addition of 15% saison.

At the end of this process, the cold infusion of the aforementioned local flowers and herbs took place, including wormwood, lemon balm, yarrow, chamomile, mint of the Aosta Valley variety and crispum.

Yarrow and chamomile bring herbaceous, slightly tannic and floral perception scents, while wormwood and lemon balm give balsamic freshness with hints of citrus.

Created to celebrate Ca' del Brado's brewery anniversary. This event takes place in winter, embracing a fabulous fairy tale imagery upheld by the whispers of the cold, steeped in wild legends and woodland mysteries on the edge of the Bolognese Apennines.

Every year, this beer is born with the intention of being a unique project every time, as it is different every year that passes.
