For this Braam, we sourced hand-picked blackberries from Ferme Framboos in Huldenberg, Vlaams-Brabant, Belgium. We macerated these for three months in a 50/50 cut with lambikken from five different barrels and five different brews. Before bottling, we added lambikken from another barrel and two different brews. The majority of the lambikken that we used are 3 Fonteinen brewed, and one quarter of those are from our own Brabant farmers’ collective. The final fruit intensity is 384 grams of blackberries per litre of Braam. Bottling date: 26/01/2021.

3 Fonteinen Braambes è un blend di Lambic di diverse annate macerato per 4 mesi con more locali colte a mano.
La proporzione è un 1 kg di more per 1 litro di Lambic, il profumo intenso di frutti di bosco si evolve in continuazione nel bicchiere.
Chiaramente non sono stati aggiunti sciroppi o zuccheri.
Consigliamo di versare in un decanter un pò prima della degustazione, far roteare il bicchiere con lo scopo di ossigenare il liquido.
Si tratta di un prodotto molto complesso che ha bisogno dei suoi tempi per esprimersi al meglio!
