Smaak 3 Fonteinen Framboos is een fruitlambik die ontstaat door de langzame maceratie van handgeplukte, volle frambozen op traditionele lambik. Zoals gebruikelijk bij 3 Fonteinen, bevat het bier geen toegevoegde sappen, siropen of zoetstoffen en wordt het ongefilterd en ongepasteuriseerd gebotteld, wat de puurheid en authenticiteit van het bier waarborgt.

Voor deze variant werden de frambozen met de hand geplukt in Huldenberg, een regio vlakbij Leuven, België. De frambozen werden bijna vier maanden gemacereerd op een blend van jonge en tweejarige lambikken, afkomstig van vijf verschillende vaten en zeven verschillende brouwsels. Dit draagt bij aan de complexiteit van het bier, met verschillende nuances in smaak en aroma.

De uiteindelijke vruchtintensiteit bedraagt 314 gram frambozen per liter, wat zorgt voor een mooie balans tussen de frisse, licht zure tonen van de frambozen en de kenmerkende zurigheid en diepte van de lambik. Dit maakt 3 Fonteinen Framboos tot een verfijnd en smaakvol bier, waarin de natuurlijke fruitigheid centraal staat. Serveertips Om het aroma van dit bier het best tot zijn recht te laten komen adviseren wij een bijhorend glas te gebruiken. 3 Fonteinen Framboos es el resultado de la maceración de frambuesas enteras recolectadas a mano sobre lambic jóvenes durante al menos cuatro meses, en una proporción de un kilogramo de fruta por litro de lambic. La lambic de frambuesa se vuelve a mezclar con lambic más joven para obtener una intensidad mínima del 35% de fruta y se embotella inmediatamente después. Estas botellas luego se almacenan en bodegas durante al menos cinco meses para que la frambuesa lambic pueda convertirse en un Framboos hermoso, tradicional y refinado. Con una aroma abundante de frutos del bosque a medida que se calienta en la copa, 3 Fonteinen Framboos envejecerá perfectamente, pero puede perder algunos de los colores vibrantes y aromas de frutos del bosque. Esta lambic sin filtrar y sin pasteurizar es totalmente natural sin zumos artificiales, jarabes o azúcares agregados. ¡Lambic tradicional es un patrimonio cultural vivo arraigado en el valle de Zenne!

HISTORIA 3 FONTEINEN
Fue fundada en el año 1887 como un local que funcionaba como café y a la vez productor de lambics. Donde elaboraban gueuze mediante la mezcla de lambics jóvenes y añejadas que eran adquiridas de otras cerveceras. La compañía fue adquirida en 1953 por Gastón De Belder, amplió el negocio con un restaurante, al comienzo de la década de los 80 falleció y la empresa la heredaron sus hijos Armand y Guido. Armand se quedó al mando de la fábrica. Continuo con la tradición de la mezcla de lambics, actualmente ya no sólo mezcla, también elabora sus propias cervezas. Boon, Girardin, Lindemas y Cantillon son las cerveceras que les proporcionan los lambics para poder hacer la mezcla y obtener sus geuze.

Smaak 3 Fonteinen Framboos Honing is een bijzondere variant van hun klassieke frambozenlambik, waarbij zomerframbozen gecombineerd worden met een vleugje honing. De zomerframbozen werden gedurende drie maanden gemacereerd op een blend van één- en tweejarige lambikken, afkomstig van drie verschillende vaten en brouwsels.

De uiteindelijke fruitintensiteit bedraagt 332 gram frambozen per liter, wat zorgt voor een rijke, fruitige smaak die prachtig in balans is met de zurige kenmerken van de lambik. Wat deze versie echter onderscheidt, is de toevoeging van een subtiele hoeveelheid honing – slechts twee gram per liter bij het bottelen. Dit geeft een lichte zoetheid en extra dimensie aan de smaak, zonder het karakter van de lambik te overheersen.

Deze Framboos Honing biedt dus een verfijnde mix van de natuurlijke fruitigheid van de frambozen en een delicate honingtoets, wat resulteert in een unieke en complexe smaakervaring. For this Braam, we sourced hand-picked blackberries from Ferme Framboos in Huldenberg, Vlaams-Brabant, Belgium. We macerated these for three months in a 50/50 cut with lambikken from five different barrels and five different brews. Before bottling, we added lambikken from another barrel and two different brews. The majority of the lambikken that we used are 3 Fonteinen brewed, and one quarter of those are from our own Brabant farmers’ collective. The final fruit intensity is 384 grams of blackberries per litre of Braam. bottling date: 26/01/2021

Smaak 3 Fonteinen Framboos is een fruitlambik die ontstaat door de langzame maceratie van handgeplukte, volle frambozen op traditionele lambik. Zoals gebruikelijk bij 3 Fonteinen, bevat het bier geen toegevoegde sappen, siropen of zoetstoffen en wordt het ongefilterd en ongepasteuriseerd gebotteld, wat de puurheid en authenticiteit van het bier waarborgt.

Voor deze variant werden de frambozen met de hand geplukt in Huldenberg, een regio vlakbij Leuven, België. De frambozen werden bijna vier maanden gemacereerd op een blend van jonge en tweejarige lambikken, afkomstig van vijf verschillende vaten en zeven verschillende brouwsels. Dit draagt bij aan de complexiteit van het bier, met verschillende nuances in smaak en aroma.

De uiteindelijke vruchtintensiteit bedraagt 314 gram frambozen per liter, wat zorgt voor een mooie balans tussen de frisse, licht zure tonen van de frambozen en de kenmerkende zurigheid en diepte van de lambik. Dit maakt 3 Fonteinen Framboos tot een verfijnd en smaakvol bier, waarin de natuurlijke fruitigheid centraal staat. Serveertips Om het aroma van dit bier het best tot zijn recht te laten komen adviseren wij een bijhorend glas te gebruiken. 3 Fonteinen Raspberry is the result of macerating hand-picked whole raspberries on young lambic for at least four months, in a proportion of one kilogram of fruit per liter of lambic. The raspberry lambic is then blended with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the raspberry lambic can develop into a beautiful, traditional, and vibrant Raspberry. With a abundant forest fruit nose as it warms in the glass, 3 Fonteinen Raspberry will age perfectly but may lose some of the vibrant colors and forest fruit aromas.

This unfiltered and unpasteurized lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!
