Voor deze vintage hebben we geprobeerd om de kruidige eigenschappen van de salie te versterken, samen met een frisse, levendige maar toch karakteristieke blend van verschillende eikenhouten puncheons (500 en 400 liter) en een rustieke saison.
De neus onthult kruidige aroma's van verse salie, eikenhout, bergamotschil, groene jasmijnthee en zelfs een subtiele hint van munt. In de mond is de salie goed geïntegreerd en vormt een aanvulling op de citroenachtige, aardse en funky tonen van het bier. De zuurgraad is evenwichtig en niet overweldigend, wat goed past bij de Spróng. Het bier heeft een zuivere en verfrissende afdronk die uitnodigt tot nog een slok.

Spróng je směs divokých piv s délkou zrání od 6 měsíců do 4 let, se sicilskou šalvějí. V tomto ročníku jsme se snažili zvýraznit bylinné vlastnosti šalvěje svěží, živou, ale zároveň charakteristickou směsí několika dubových punčů (500 a 400 litrů) a rustikálním saisonem.
Vůně odhaluje bylinné aroma čerstvé šalvěje, dubu, bergamotové kůry, zeleného jasmínového čaje a dokonce i jemný náznak máty. Na patře je šalvěj dobře integrovaná a doplňuje citronové, zemité a funky tóny piva. Kyselost je vyvážená a ne příliš silná, což se dobře snoubí se Spróngem a má čistou a osvěžující dochuť, která vybízí k dalšímu doušku.

Spróng is best preferably enjoyed within 5 years of its release, with its optimal range being between 6 months and 3 years. However, it’s worth exploring the possibility of extended aging to see how the sage notes will integrate into the beer. Store our beers upright or lying down in a cool, dark place. Our beers are best enjoyed between 12 and 14 degrees Celsius.

It’s a subtle addition we made compared to sprong, to add a slightly earthiness and spice to it.

Tommie Sjef Sprøng es una mezcla de ales salvajes maduras, envejecidas en toneles de roble (de 400 y 500 litros) entre un año y medio y 3 años, y una cerveza tipo Saison fermentada y añejada en barril, con Dry Hop durante unos meses con lúpulos Saaz. Hemos añadido salvia siciliana y ajenjo (artemisia absinthium y otra variedad secreta) a la mezcla final para macerar una semana antes del embotellado. Es una adición sutil en comparación con el sprøng original, para aportar un toque terroso y especiado.

En el aroma se detectan notas cítricas y terrosas de los lúpulos Saaz, junto con cualidades herbales y florales como caléndula, salvia, paja y manzanilla, con un trasfondo de miel cruda. Esta terrosidad de los lúpulos Saaz se acentúa en el sabor con la sutil adición de ajenjo. Esta especiada terrosidad del ajenjo, que recuerda a la cúrcuma fresca, se combina muy bien con las notas de salvia y cítricos. La acidez media y la firme amargura le dan a la cerveza un carácter fresco y alegre. Algunas notas del barril, como pieles de uva blanca y manzanas tánicas, complementan esta vivacidad con una mayor estructura en el paladar y una especie de complejidad robusta.

Sprøng es perfecta para disfrutarla de inmediato, pero puede beneficiarse de unos meses de envejecimiento en la botella, lo que la hace ideal para disfrutar durante las festividades. El envejecimiento equilibrará los sabores y permitirá que afloren matices más sutiles en el aroma y el sabor. Cabe mencionar que será interesante observar la interacción de las hierbas, los lúpulos y el perfil de la levadura a lo largo del proceso de envejecimiento.
