Ola Dubh, or ‘Black Oil’ in Gaelic, is masterfully crafted by aging Old Engine Oil in 12-year-old Highland Park whisky casks. This meticulous process infuses the beer with harmonious whisky notes and a roasty, bittersweet, chocolatey finish. It’s an intensive labor of love for the brew team, who fill the mash tuns to the brim with roast barley, pinhead oats, and malted barley, creating a dense and viscous beer that ferments at a slow pace. After at least six months in whisky-soaked casks, the beer takes on the nuanced flavors of the oak, and it’s only deemed ready when their Master Brewer, Stuart, gives his nod of approval.

Description

Ola Dubh Special Reserve 12 is based on award winning Old Engine Oil matured in Highland Park 12 Year Old Whisky Barrels. It retains the appearance of used motor oil deep dark brown, dense and oily. On the nose there are notes of truffle oil and cocoa as well as faint smoke and heathery peat from the whisky casks. Lighter in body than its appearance suggests Ola Dubh is pithy, oily, salty and bitter on the palate. The finish is exceptional burnt and bitter notes with an interplay of late hop characters, orange oil, fruity tartness and then delicate fragrant smoke.

It was the first ale to be matured in whisky barrels from a named distillery and, with traceable casks and numbered bottles, it is a beer with real provenance. To make Ola Dubh 12, we take our Old Engine Oil (amped up to 10.5%) and age it for up to 6 months in casks that previously held Highland Park 12 Year Old single malt. And it is ready only when our head brewer, Stuart, deems it ready! Note: This beer is 8% ABV in bottle, 10.5% ABV in cask and keg.

Harviewstoun say “Ola Dubh is a labour of love. Everything about it is extreme. The brew team fill the mash tuns to the brim with roast barley, pinhead oats and malted barley. It ferments more slowly as the the yeast struggles to move around in such a viscous beer! The base beer is Old Engine Oil which they then put into Highland Park Whisky casks and it stays there for at least 6 months. During this time the flavours from the wood enter the beer to produce Ola Dubh. It is ready only when our Master Brewer, Stuart, deems it ready!”
