Durante años, los cerveceros de Goose Island han buscado maneras de incorporar higos en la Bourbon County Stout, aunque se enfrentaban a un gran desafío debido a su sabor sutil. Gracias a una nueva perspectiva del equipo de E-commerce de Goose Island, Melissa Alleguez y Ryan Hubona elaboraron una receta inspirada en los recuerdos de infancia de Melissa: robar galletas de higo del tarro de su abuela durante los veranos en el lago Míchigan. Así nació la Sir Isaac’s Stout, una cerveza inspirada en las galletas de higo y las de graham cracker.

Resaltando los perfiles de fruta seca que el bourbon aporta desde las barricas, los cerveceros utilizaron higos Black Mission (¡10.000 libras, para ser exactos!) para crear esta variante con matices de fruta deshidratada, miel, melaza y cítricos, evocando el sabor clásico de las galletas de higo que aún se encuentran en las estanterías hoy en día.

En zo ontstond de op vijgenkoekjes en Graham cracker geïnspireerde Sir Isaac's Stout. Om de gedroogde, gefrituurde profielen uit de bourbon in de vaten te benadrukken, gebruikten onze brouwers Black Mission-vijgen (10.000 pond, om specifiek te zijn) om deze variant te creëren, wat resulteerde in kenmerken van gedroogd fruit, honing, melasse en citrus, die allemaal doen denken aan het klassieke vijgenkoekje dat tegenwoordig in de schappen ligt.

And thus, the fig cookie and graham cracker-inspired Sir Isaac’s Stout was created. Highlighting the dried fried profiles extracted from the bourbon in the barrels, our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.

Pendant des années, les brasseurs de Goose Island ont cherché comment intégrer la figue dans leur légendaire Bourbon County Brand Stout. Un défi de taille, tant ce fruit offre des arômes subtils et délicats. L’inspiration est finalement venue de l’équipe e-commerce de la brasserie : Melissa Alleguez s’est rappelée ses étés passés sur les rives du lac Michigan, quand elle chipait des biscuits à la figue dans la boîte à gâteaux de sa grand-mère… De là est née l’idée de créer un Stout inspiré de ces douceurs.
Les brasseurs ont ainsi travaillé avec près de 4,5 tonnes de figues Black Mission, associées à un généreux ajout de biscuits et à la richesse boisée des fûts de Bourbon. Le résultat ? Un Stout aux arômes intenses de fruits secs, figue, miel, mélasse et agrumes, évoquant à la fois le biscuit à la figue et la profondeur unique d’un grand Imperial Stout. For years, brewers at Goose Island have brainstormed ways to incorporate figs in Bourbon County Stout, but faced a daunting task due to their subtle flavor. After fresh thinking from members of the Goose Island E-commerce team, Melissa Alleguez and Ryan Hubona crafted a recipe inspired by Melissa's childhood memories of stealing fig cookies out of her grandma's cookie jar during her summers on Lake Michigan. And thus, the fig cookie and graham cracker-inspired Sir Isaac's Stout was created. Highlighting the dried fried profiles extracted from the bourbon in the barrels, our brewers used Black Mission figs (10,000 pounds of them, to be specific) to create this variant resulting in characteristics of dried fruit, honey, molasses, and citrus, all reminiscent of the classic fig cookie sold on shelves today.

For years, brewers at Goose Island have brainstormed ways to incorporate the subtle flavors of figs into Bourbon County Stout. This year, members of the Goose Island Ecommerce team, Melissa Alleguez and Ryan Hubona, crafted a recipe inspired by Melissa’s childhood memories of stealing fig cookies out of her grandma’s cookie jar during her summers on Lake Michigan. Amplifying flavors of dried fruit often found in bourbons, our brewers used 10,000 pounds of Black Mission figs in addition to graham crackers to create this variant resulting in a decadent combination of dried fruit, honey, molasses and citrus.
