Deze imperial stout met een stevig alcoholpercentage van 14,3% biedt een unieke houtgerijpte beleving dankzij de bijzondere afwerking op geroosterd kersenhout in honingraatvorm.
Vernieuwing binnen een klassieker
Voor deze speciale editie besloot Goose Island in 2021 het traditionele rijpingsproces te verrijken met een nooit eerder toegepaste techniek: de volledig uitgerijpte Bourbon County Stout werd afgewerkt met toasted fruitwood, en wel in de vorm van honingraatvormige kersenhoutsnippers. Deze vorm vergroot het contactoppervlak met het bier, waardoor een maximaal smaakextractieproces plaatsvindt en unieke, subtiele aroma’s naar voren komen die normaal gesproken niet uit eikenhouten vaten vrijkomen.
Smaakprofiel: rood fruit, kers en toffee
Het resultaat is verbluffend. In tegenstelling tot de klassieke eikenhouten tonen van de Original Bourbon County Stout, onthult deze Cherry Wood-variant een elegant, fruitig en complex profiel. In de neus komen rijpe kersen, rood fruit en een vleugje lichte toffee je tegemoet, vergezeld van zachte bourbonwarmte en subtiele houtaroma’s. In de smaak proef je een uitgebalanceerde combinatie van zoete mout, karamel, en geroosterd fruit, afgerond met een warme, fluweelzachte afdronk.

Bourbon County Stout completamente madura y con madera de fruta tostada, concretamente, virutas de cerezo en forma de panal. La versatilidad de la madera de cerezo y la forma del panal permitieron una máxima extracción de sabor, revelando características complejas como frutos rojos, cereza madura y un ligero toque a toffee, que no se encuentran en la barrica de roble original. El resultado es una elevación asombrosa y una diferencia notable con respecto a nuestra Bourbon County Stout Original.

Sur ce millésime 2021, les brasseurs de Goose Island ont repoussé les limites du vieillissement en réalisant une expérience encore jamais tentée : prendre du Bourbon County Stout parfaitement maturé et le faire reposer sur des copeaux de bois de cerisier toastés, découpés en forme de nid d’abeille.
Grâce à cette forme et à la richesse aromatique naturelle du bois de cerisier, les brasseurs ont extrait des saveurs inédites, absentes des traditionnels fûts de chêne : fruits rouges, cerise bien mûre et caramel léger.
