Rusty Cage is a sophisticated Saison that bridges the gap between farmhouse brewing and fine winemaking. Aged in Sauvignon Blanc and Riesling barrels, it reveals a complex bouquet where the rustic, peppery phenols of the yeast meet the bright, acidic profile of white wine grapes. Expect sensory notes of tart green apple, gooseberry, and a hint of lime zest, all underpinned by a grainy malt backbone. Appearance. Pale gold with a slight haze, topped by a dense, rocky, long-lasting white head that leaves intricate Belgian lacing.
Aroma. High intensity with a complex blend of white grape, gooseberry, and lemon zest from the wine barrels. Moderate fruity esters of pear and apricot mingle with spicy black pepper phenols. Low floral hop notes and a soft, grainy malt presence are evident, with a subtle vinous acidity.
