Zeta Salvatge is a vibrant Hazy IPA that showcases the unique biotransformations of Mosaic and Cascade hops. Fermented with a proprietary M73 yeast strain isolated from a local fig tree, it delivers an explosion of tropical fruit and citrus aromas. The pour is intensely hazy with a silky, protein-rich texture that underscores its Alboraya origin. Mosaic drives deep notes of blueberry and stone fruit, while Cascade adds a layer of grapefruit zest. This Valencian IPA balances a creamy, soft mouthfeel with a restrained bitterness, resulting in a lush, wild profile that remains highly drinkable and juice-forward.
Appearance.Color is deep straw to gold (5 SRM) with an opaque, hazy clarity and a luminous shine. It supports a medium-to-large, rocky, white meringue-like head with excellent retention and lacing.
Aroma.High intensity hop aroma dominated by tropical mango, blueberry, and stone fruit. A light citrus and floral character from the Cascade is present. The malt is low and bready, serving as a neutral backdrop for the moderate, fruit-forward yeast esters.
Taste.Initial impression is a burst of tropical juice, passion fruit, and citrus peel. Malt flavor is low and grainy-sweet. Perceived bitterness is medium-low, effectively masked by the beer's fullness. The finish is off-dry and smooth, with a lingering, soft hop character that avoids any harshness or resinous burn.
Mouthfeel.Medium-full body with a noticeably smooth and creamy texture. Carbonation is moderate. It possesses a soft, silky mouthfeel without any astringency or raw starchiness, showing very light alcohol warmth.
