Squid Ink is a bold Specialty IPA that balances a complex, dark malt profile with a vigorous hop character. A blend of nine malts provides a smooth, dark foundation of light chocolate and toasted bread without harsh roastiness. This depth is met by an assertive hop profile featuring Galaxy, Columbus, Summit, and Chinook. Galaxy contributes tropical notes of passionfruit and peach, while Chinook and Columbus add layers of resinous pine and dank earthiness. Summit rounds out the profile with a sharp citrus edge. The result is a stormy, dark beer that remains hop-forward and remarkably drinkable, finishing with a clean, lingering bitterness.
Appearance. Opaque black with deep mahogany highlights at the edges. Topped with a persistent, dense tan head that leaves significant lacing. (SRM 35-40)
Aroma. High intensity hop aroma leading with pine needles and resinous sap from Chinook and Columbus, followed by the tropical ripeness of Galaxy. Light background notes of dark cocoa and toasted grain from the complex malt bill. Clean fermentation profile with minimal esters.
Taste. Initial punch of resinous pine and citrus zest, followed by a subtle, supportive malt sweetness. Mid-palate reveals dark chocolate and toasted crusts without burnt or ashy qualities. Firm bitterness drives a dry, crisp finish where lingering tropical fruit and earthy hops reside.
Mouthfeel. Smooth, medium body with moderate carbonation. Very light alcohol warmth that integrates well with the hop bitterness. No astringency from the dark malts.
