This vibrant Wild Specialty Beer captures a tropical escape, balancing a bright lactic tartness with an explosion of fruit character. The aroma leads with the punchy, tropical essence of hot pink guava and juicy pineapple, layered over the soft, velvet sweetness of fresh peach. A distinct note of tropical coconut rounds out the profile, providing a subtle, creamy counterpoint to the beer’s bold acidity. Despite its intense fruit-forward nature, a satisfyingly rich malt backbone provides essential structural support. The fermentation is clean and refreshing, resulting in a bold sour beer that feels both playful and meticulously balanced.
Appearance. Pours a hazy, glowing orange with distinct pinkish hues (SRM 5-7). Features a moderate, off-white to pale pink head with fair retention and light lacing.
Aroma. High aromatic intensity dominated by tropical fruit. Leading notes of guava and pineapple are followed by peach esters and a subtle, sweet coconut creaminess. Clean lactic sourness is present, with very low bready malt and no hop aroma.
Taste. Initial impression is sharply tart but quickly balanced by fruit sweetness. Pronounced flavors of guava and pineapple transition into a stone fruit middle. The coconut provides a smooth, tropical finish that lingers. Malt flavor is low but provides a grainy, crackers-like base. Hop bitterness is very low, and the finish is crisp, dry, and acidic.
