Willibald Farm Brewery Overkill
American IPA 8 º
This West Coast Double IPA, crafted in collaboration with Blood Brothers, delivers an aggressive and punchy sensory profile defined by its potent hop charge and clean finish. The heavy use of Segal Ranch Zumo and Citra hops results in an intense aromatic burst of lime zest, grapefruit, and tropical mango. A lean malt backbone provides just enough support to allow the hop-derived bitterness to dominate, while classic notes of resin and pine needles provide depth. At 8% ABV, the beer exhibits a well-integrated warmth that complements the high bitterness, finishing remarkably dry and crisp with a lingering citrus zest.
Appearance. Pours a brilliant medium gold with exceptional clarity. Topped by a medium-sized, bright white head with excellent persistence and thick, soapy lacing left on the glass.
Aroma. High intensity hop aroma featuring prominent lime zest, grapefruit, and crushed pine needles. Distinct tropical notes of mango and papaya from the Citra hops are supported by a very low, clean, grainy malt sweetness. Fermentation is very clean with no significant yeast esters.
Taste. Initial impression is a sharp, clean hop bitterness that is very high but not harsh. Intense flavors of lime peel and citrus oil transition into resinous pine and a light toasted cracker malt character. The finish is bone-dry with a lingering, clean bitterness and a final pop of citrus fruitiness. Alcohol is present but smooth.
Mouthfeel. Medium body with a smooth, slightly oily texture from hop resins. Carbonation is medium-high, providing a crisp bite. A light, pleasant alcohol warmth is noticeable but lacks any harsh fusel character. No astringency.
