Wildflower Brewing & Blending Bright Side: Shiraz

This Grape Ale showcases a vibrant intersection of viticulture and brewing, utilizing hand-harvested Shiraz grapes from Murrumbateman. The influence of whole-bunch, carbonic maceration is evident in the bright, lifted red berry aromatics that dance alongside the rustic, earthy depth of the grape skins. Built upon the Gold Australian Wild Ale base, the sensory profile is defined by a delicate marriage of spicy fermentation esters and rich stone fruit. Eight months of maceration yields a sophisticated complexity, where the vinous character of the Shiraz provides structure without overwhelming the supporting pale malts. It concludes with a sparkling, bone-dry finish reminiscent of fine Australian sparkling wine.
Appearance. Pours a brilliant, deep burgundy with ruby highlights and excellent clarity. It is topped by a thin, pink-tinted head that shows moderate to low retention, leaving minimal lacing on the glass.
Aroma. The aroma is moderately high and dominated by Shiraz varietal notes of blackberry, plum, and a hint of black pepper. Subtle rustic undertones of tobacco and leather emerge from the whole-bunch contact. The base malt remains neutral and supportive, while the fermentation adds delicate spicy phenols and light pear esters. No bubblegum or banana is present.
Taste. The initial impression is a burst of bright red berries and dark stone fruit from the Shiraz, followed by a light, biscuity malt character. The mid-palate reveals earthy, slightly savory notes and a touch of skin tannin. Bitterness is very low, allowing a mild, refreshing tartness to drive the balance. The finish is exceptionally dry, crisp, and clean with a lingering vinous aftertaste.
Mouthfeel. Medium-light body with a lively, high carbonation that creates a prickly, champagne-like effervescence. There is a very faint, pleasant alcohol warmth and a notable lack of astringency despite the grape skin contact.
