Persistence is a complex Flanders-inspired red ale, characterized by the vibrant, tart presence of Montmorency Cherries. Foeder aging imparts a sophisticated leathery accent and structured oak notes that ground the beer's bright acidity. The house sour culture provides a layered funk of wet hay and mild barnyard, seamlessly blending with the cherry’s stone fruit character. High attenuation from the fermentation process results in a dry, crisp finish, while the 7.6% ABV provides a subtle, integrated warmth. This blend achieves a refined balance between the fruit's natural sweetness and the wild, rustic funk of Brettanomyces, delivering a profile that is both tart and deeply earthy.
Appearance. Deep ruby to garnet-red in color (20–25 SRM); clear with a slight haze from fruit solids; a pale pinkish-ivory head with moderate retention and fine lacing.
Aroma. High intensity of tart Montmorency Cherries and red berries. Secondary aromas include a leathery funk, wet hay, and earthy Brettanomyces character. Light toasted malt and subtle vanillin from oak foeder aging are present, with no hop aroma.
Taste. Initial impression is sharply tart and fruity, dominated by fresh cherries and stone fruit. Malt provides a lean backbone of toasted bread and dark fruit. Hop bitterness is very low, with acidity providing the primary balance. The finish is bone-dry and crisp, leaving a lingering aftertaste of cherry skins, oak tannins, and a rustic, barnyard funk.
Mouthfeel. Medium-light body with high, prickly carbonation. A noticeable but well-integrated alcohol warmth is present. Low astringency from fruit skins and oak tannins, with a clean, puckering sensation.
