This Wild Specialty Beer presents a tropical symphony, blending a bright lactic acidity with a lush array of fruit and cream. The sensory profile is dominated by juicy apricot and ripe mango, creating a stone fruit and tropical base that is elevated by the ester-driven notes of banana. A distinct smoothness emerges through the integration of vanilla and coconut cream, which tempers the underlying wild fermentation’s funky edges. This interplay results in a complex experience where the tartness of an American Wild Ale meets the indulgent, velvety textures of a dessert-inspired fruit melange, finishing with a lingering, sweet-tart fruit presence.
Appearance. Deep gold to pale orange (7-10 SRM) with significant haze from fruit solids. Pours with a moderate-to-low off-white head that dissipates quickly, typical of high-acid wild ales, leaving minimal lacing.
Aroma. High intensity with a complex layering of tropical mango and stone-fruit apricot. Pronounced vanilla and sweet coconut notes provide a pastry-like backdrop. Subtle banana esters are present, alongside a clean lactic sourness and a faint, earthy funk characteristic of wild fermentation. Malt and hop aromas are largely obscured by the specialty ingredients.
Taste. The initial impression is a sharp, refreshing lactic tartness that immediately gives way to succulent mango and apricot flavors. The mid-palate features a rich, creamy sweetness from the coconut cream and vanilla, which softens the acidity. Banana notes add depth to the fruit profile. Hop bitterness is virtually absent, allowing the acidity to provide the structural balance. The finish is long and fruit-forward, balancing the tart wild ale base with a lingering tropical sweetness.
Mouthfeel. Medium-full body, which is unusually rich for a wild ale due to the coconut cream and vanilla additions. Carbonation is moderate. Alcohol warmth is low and well-integrated. A smooth, creamy texture coats the palate, with no detectable astringency despite the acidic profile.
