This Imperial Stout presents a decadent, dessert-forward profile inspired by celebratory birthday cake. Aromas of rich toffee and burnt sugar lead into a layered palate of velvety vanilla and deep caramel, reminiscent of artisanal confectionery. While the 13.5% ABV provides a significant, smooth warmth, the core remains firmly anchored in the style's tradition of dark, roasted malts and cocoa depth. The addition of cake-themed elements provides a luscious sweetness that balances the characteristic bitterness, resulting in a complex, cake-laden sensory experience that is both indulgent and structurally sound, despite its massive gravity.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, persistent deep tan head that leaves significant lacing and visible legs on the glass due to high viscosity and alcohol.
Aroma. High intensity with a dominant confectionery character of creamy vanilla, buttery toffee, and rich caramel. These dessert notes are underpinned by a robust malt base of dark chocolate, espresso, and lightly charred grain. Low fruity esters of prune and dried fig emerge as it warms, with negligible hop aroma.
Taste. Initial wave of sweet caramel and toffee richness, immediately followed by the smooth, aromatic presence of vanilla. The mid-palate reveals heavy-duty roasted malts, providing bittersweet chocolate and black coffee notes. Bitterness is moderate, providing enough structure to prevent a cloying sensation despite the cake-themed sweetness. The finish is long and lingering, transitioning from sugary sweetness to a warm, roasty, and slightly vinous conclusion.
Mouthfeel. Full-bodied and exceptionally chewy with a luscious, velvety texture. Carbonation is low to moderate, enhancing the beer's creamy weight. A noticeable but smooth alcohol warmth spreads across the palate, consistent with its high strength.
