Wayward Brewing West Coast IPA
This West Coast IPA delivers a punchy, resinous profile defined by its assertive hop quartet. Columbus and Topaz lead with dank, earthy, and spicy resin, while Simcoe adds a sharp layer of pine and grapefruit zest. Mosaic rounds out the aromatic profile with vibrant notes of blueberry and tropical mango. Built on a lean, grainy malt base, the palate is hit with a firm, lingering bitterness that remains clean and crisp. The finish is decidedly dry, emphasizing the hop-forward character typical of an American IPA, with just a hint of smooth warmth from its 7% ABV.
Appearance. Deep gold to pale amber (approx. 8 SRM). Brilliant clarity. Persistent, off-white, frothy head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent pine, resinous spice, and dank herbal notes. Secondary layers of grapefruit peel, mango, and a distinct berry-like character. Very low, clean, crackery malt presence with a neutral fermentation profile.
Taste. Intense hop flavor mirroring the aroma; notes of resin, earthy spice, and citrus pith dominate. Initial light grainy malt sweetness is quickly overtaken by a high, assertive bitterness. Flavors of pine needles and tropical fruit linger into a very dry, crisp finish with a clean aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture. Moderate-high carbonation provides a refreshing bite. A light, pleasant alcohol warmth is present but well-integrated. No astringency.
