Bissoe presents a refined modern take on the traditional English IPA, bridging heritage malt complexity with contemporary English-grown hops. The foundational use of Golden Promise malt provides a deeply bready and slightly sweet base, layered with the subtle toffee notes of caramalts. This provides a robust stage for English Harlequin and Cascade hops to showcase a vibrant interplay of orange citrus, floral spice, and delicate stone fruit. Balanced and well-attenuated, it delivers a firm bitterness that cleanses the palate, resulting in a dry, refreshing finish that honors its British roots while celebrating modern agricultural innovation.

Appearance. Pours a clear, deep golden to light amber color (approximately 8-12 SRM) with a persistent, off-white, frothy head that leaves delicate lacing.

Aroma. Moderate to high intensity featuring floral and grapefruit notes from Cascade, alongside Harlequin's subtle peach and pineapple. A rich, bready malt presence from Golden Promise supports the hops, accompanied by light hints of toffee and low fruity esters.

Taste. Initial bready and biscuity malt sweetness is quickly met by a firm hop bitterness. Flavors of citrus peel and spicy-floral hops predominate, supported by a light caramel-like malt depth and moderate fruitiness. The finish is medium-dry with a lingering, clean bitterness that remains smooth.
