White Velvet is a luscious expression of a Wild Specialty Beer, designed to emulate a decadent dessert. Vault City’s signature lactic tartness provides a bright backdrop for an indulgent combination of ripe banana and creamy coconut milk. The aromatic profile is dominated by rich, tropical fruit notes and a subtle, sweet nuttiness, reminiscent of a banana cream pie. On the palate, the assertive acidity is softened by the inclusion of coconut milk, creating a velvety texture that carries through to a smooth, lingering finish. This opaque, pale-straw sour strikes a unique balance between sharp fermentation character and thick, fruit-forward richness.

Appearance. Opaque, pale straw to milky yellow color. Pours with a small, white head that dissipates quickly due to the presence of coconut fats, leaving minimal lacing.

Aroma. High intensity of ripe, mashed banana and sweet coconut cream. A clean, sharp lactic acidity provides a bright top note, while very low doughy malt notes sit in the background. No hop aroma or esters beyond the dominant fruit additions.

Taste. Initial impression is a sharp, refreshing tartness that quickly transitions into rich, sweet banana and tropical coconut flavors. Malt character is minimal, providing only a light cracker-like base. Bitterness is nonexistent. The fermentation character is clean and acidic, lacking funk, which balances the dessert-like ingredients. The finish is lingering, creamy, and fruit-dominant.

Mouthfeel. Medium-full to full body with a thick, velvety texture from the coconut milk and banana solids. Carbonation is moderate. Alcohol warmth is negligible. No astringency despite the high acidity.
