This Wild Specialty Beer is a sensory homage to classic confectionery, marrying Vault City’s signature mixed fermentation base with an intense infusion of fresh pears. The experience centers on the nostalgic aroma of pear drops, intricately woven with the bright, lemon sherbet character of the house culture. On the palate, juicy fruit sweetness is deftly balanced by a sharp, tangy lactic acidity, recreating the sensation of hard-boiled sweets. The absence of hop bitterness allows the vibrant pear esters and citrus-forward fermentation to shine. Refreshing and evocative, it concludes with a clean, crisp finish that highlights the brewery’s mastery of fruited wild ales.
Appearance. Pale straw to light gold (3-5 SRM). Pours with a moderate white head that dissipates fairly quickly, typical of high-acidity styles, leaving minimal lacing. Slight to moderate haze is present from the pear infusion and mixed culture.
Aroma. High intensity of candy-like pear esters and fresh, juicy pear fruit. Distinctive lemon sherbet notes from the mixed fermentation base provide a sharp, citrusy backdrop. Low bready malt; no hop aroma or Brettanomyces funk is apparent.
Taste. Initial impression of sweet pear candy followed by a burst of bright, tangy lactic sourness. Malt flavor is minimal and neutral. Hop bitterness is absent, allowing the acidity to define the structure. The balance favors the vibrant fruit profile, finishing clean and refreshing with a lingering pear skin and citrus aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation that enhances the sherbet-like quality. Alcohol warmth is very low at 5.5% ABV. A light, mouth-watering tartness provides a clean finish without significant tannin or astringency.
