This Wild Specialty Beer is a vibrant collaboration between Vault City and Pastore, reimagining the iconic Papa Doble cocktail. The sensory profile leads with a sharp, refreshing citrus zest from lime and grapefruit, balanced by the rounded, tropical sweetness of banana and the tart depth of cherry. At 7.5% ABV, it carries a sturdy backbone to support a complex, house-sour base characterized by a bright lactic tang and faint, wild funk. The experience is multi-layered, where the aggressive acidity of the citrus melds with jammy stone fruit, finishing with a crisp, dry, and mouth-watering tartness that mirrors its cocktail inspiration.

Appearance. Pours a deep pink to pale ruby (8–12 SRM) with a hazy to near-opaque clarity from heavy fruit additions. The head is moderate in height, off-pink in color, with fair retention and light lacing.

Aroma. High intensity aromatics of zesty lime and pithy grapefruit dominate, followed by a secondary layer of sweet, jammy cherry. An unusual, creamy banana note provides a tropical undertone, while the fermentation profile contributes clean lactic acidity and a very faint earthy funk. Hop and malt characters are absent.

Taste. The initial impression is one of bold lactic sourness and intense citrus punch. Fresh lime juice and ruby grapefruit flavors are prominent throughout. Cherry adds a tart, vinous quality, while banana softens the mid-palate with a subtle, fruity sweetness. The malt is minimal, providing only a light cracker-like base. It finishes very dry and puckering with a lingering citrus and cherry tartness.

Mouthfeel. Medium body, which is slightly fuller than typical wild ales due to the fruit solids and 7.5% ABV. Carbonation is moderate-high, enhancing the acidic prickle. A light, well-integrated alcohol warmth is present, with no significant astringency.
