This Wild Specialty Beer reimagines a nostalgic Scottish dessert through a contemporary sour lens. It pours a vibrant, luminous orange with a frothy white head. The sensory experience is dominated by the unmistakable Iron Brew profile—notes of candied orange zest, bubblegum, and a subtle ginger-like spice—woven into a creamy tapestry of rich Vanilla. A sharp, lactic acidity from the wild fermentation provides a zesty backbone that cuts through the perceived sweetness of the ice cream character. The result is a playful, medium-bodied ale where the tartness of the base beer perfectly balances the indulgent, soda-shop finish of the float inspiration.
