Two Metre Tall

This Brett Beer showcases the complex evolution of a spontaneous solera, marrying rustic farmhouse character with the distinct nuttiness of Spelt. The sensory profile is defined by an intricate balance of sun-bleached straw, aged leather, and wet hay, indicative of a mature Brettanomyces presence. Zesty citrus and stone fruit esters provide a bright counterpoint to the grainy, biscuit-like foundation of the raw grains. With its high attenuation and light, effervescent body, it finishes remarkably dry. The solera method imparts a refined, layered funk that integrates seamlessly with the earthy, terroir-driven grain, resulting in a sophisticated and vibrant wild ale.

Appearance. Hazy, pale gold to deep straw (SRM 4–6). Features a thick, creamy white head with excellent persistence and fine-beaded lacing.

Aroma. Moderate to high intensity with a complex bouquet of earthy funk—specifically horse blanket and damp hay—mingled with ripe apricot and lemon zest esters. The Spelt provides a background of toasted grain and rustic crackers.

Taste. Initially bone-dry and crisp. Flavors of nutty, rustic grain from the Spelt lead into a layered fermentation profile of earthy funk, light smoke, and cider-like fruitiness. Bitterness is low, allowing a subtle, clean acidity to enhance the refreshment. The finish is remarkably dry and lingering.

Mouthfeel. Medium-light body with high, prickly carbonation. Minimal alcohol warmth is present. A very slight grainy astringency adds to the rustic character without being harsh.
