This Imperial Stout, a collaboration between Trillium and Horus Aged Ales, presents an opulent sensory profile driven by a nine-hour boil and decadent adjuncts. The experience is defined by an intense aroma of milk chocolate-covered hazelnuts and the refined, roasted character of Geisha coffee. Deep layers of molasses and brown sugar provide a rich foundation, while the extended boil contributes a significant viscosity. The Geisha coffee lends a sophisticated roast presence that balances the profound sweetness, resulting in a complex, holiday-inspired profile where nutty, cocoa, and dark sugar notes meld seamlessly with a comforting alcohol warmth and a velvety, lingering finish.
Appearance. Deep, opaque brown to jet black (40+ SRM) with a dense, caramel-tinged head that shows moderate retention. The high alcohol and sugar concentration result in visible legs and high viscosity when swirled.
Aroma. High intensity and profoundly nutty. Immediate and powerful notes of milk chocolate-covered hazelnuts and freshly roasted Geisha coffee are dominant. Secondary layers of molasses, brown sugar, and dark cocoa provide a rich malt backing. Esters are low and present as faint dark fruit, with no hop aroma detected.
Taste. The initial impression is sweet and intensely rich, showcasing hazelnut and milk chocolate. This is quickly supported by a complex malt profile featuring molasses and brown sugar. The Geisha coffee provides a clean, roasted grain bitterness that balances the sweetness. The finish is long and satisfyingly sweet with lingering notes of roasted nuts and cocoa. Alcohol is present but well-integrated into the malt character.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low to moderate, enhancing the beer's richness. A noticeable, smooth alcohol warmth is present, appropriate for its high strength, without any harshness or astringency.
