This long maceration allows the cherries to fully impart their vibrant character, resulting in a beer that showcases the harmony between the fruit and our wild ales. Rosato opens with the aroma’s of strawberries, cherries, rose blossoms and marzipan, complemented by subtle funk and a touch of minerality. On the palate, it offers concentrated flavors of dark cherries, fresh strawberries, tannic blackberries, with hints of cinnamon an some vanilla from the oak barrels. The acidity and tannins are well-integrated, enhancing the fruit-forward profile. True to our style, subtle saline and mineral notes are present, adding depth and character to this wild ale. We recommend enjoying our fruit-forward wild ales relatively young to fully appreciate their vibrant character. That said, Rosato is also well-suited for aging over several years. With time, the beer will mellow, allowing the fruit flavors to integrate further with the complex base beer. Store our beers upright or lying down in a cool, dark place. Our beers are best enjoyed between 12 and 14 degrees Celsius.
