This Brett Beer presents an elegant fusion of wild fermentation and vinous complexity. Aromas are driven by the specific grape varieties used across vintages—Muscat and Pinot Blanc contribute floral and stone fruit notes, while Chardonnay and Olasz Riesling lend nuances of citrus and mineral-driven acidity. The Brettanomyces character is sophisticated, offering a bouquet of tropical fruit and a light, rustic barnyard funk that deepens with age. On the palate, expect a crisp, bone-dry profile where the vibrant fruit esters meld with a delicate tannic structure from the grape skins, finishing with a refined, lingering dryness and subtle minerality.
Appearance. Golden to deep amber (6-10 SRM). Pours with a moderate white head that recedes to a fine rim. Clarity is brilliant to slightly hazy, typical of a wild ale with extended aging and fruit additions.
Aroma. High intensity. Dominated by vinous esters of apricot, peach, and white flowers from the Muscat and Pinot Blanc grapes. The Brett character is complex, displaying aged notes of wet hay, earthy leather, and tropical pineapple. Low malt presence with no hop aroma.
Taste. Initial impression is bright and fruity. Flavors of green apple and white grape from the Olasz Riesling and Chardonnay dominate the mid-palate. Fermentation character is exceptionally dry with a light, non-lactic acidity. Very low bitterness. The finish is crisp, clean, and highly attenuated, leaving a lingering mineral and fruity aftertaste.
Mouthfeel. Medium-light body, significantly lightened by high attenuation. High carbonation provides a lively, sparkling mouthfeel. There is a subtle, well-integrated alcohol warmth from the 7.8% ABV and a very light tannic astringency from the grape skins.
