This Imperial Stout presents an explosive sensory profile, channeling volcanic intensity through ten months of aging in Rye Whisky and Bourbon barrels. Deep, earthy undertones of Beetroot provide a foundational weight, while the inclusion of black Volcanic Salt enhances the mineral complexity and enhances the rounded mouthfeel. The heat is layered and persistent, driven by the smoky, leathery notes of Chipotle and the dark fruit sweetness of Ancho Chilies. Oak-driven nuances of vanilla and spicy rye grain intermingle with a massive roasted malt core, delivering a viscous, warming experience that balances fiery spice against a backdrop of rich chocolate and dark espresso.

Appearance. Jet black and opaque (40+ SRM). Pours with a thick, persistent deep tan head that leaves significant lacing. High viscosity is apparent through prominent legs on the glass when swirled.

Aroma. High intensity. A complex blend of dark chocolate, espresso, and charred oak. Distinctive smoky notes from Chipotle chilies are balanced by the sweet, raisin-like aroma of Ancho chilies. Barrel aging contributes rich Bourbon vanilla and spicy Rye Whisky notes. Subtle earthy beetroot and a mineral edge from volcanic salt are present.

Taste. Initial impression is a massive wave of bittersweet chocolate and roasted malt. Mid-palate introduces earthy beetroot and a slow-building, smoky heat from Chipotle and Ancho chilies. The Volcanic Salt provides a savory depth that rounds out the sweetness. Barrel influence is strong, offering caramel, toasted oak, and spicy rye. Finishes with a lingering, warming combination of chili heat and firm hop bitterness against a dark cocoa background.

Mouthfeel. Full-bodied and extremely viscous with a chewy, velvety texture. Carbonation is low to moderate. Significant alcohol warmth is present but well-integrated, complemented by a slight prickle from the chili heat. Very creamy and mouth-coating.
