Timmermans Framboise Lambicus presents a vibrant sensory journey starting with an explosion of ripe, sun-drenched raspberries. This Fruit Lambic balances the traditional wild funk of spontaneous fermentation with a modern, approachable sweetness. Aged in oak barrels, it reveals delicate woody nuances that anchor the jammy fruit profile. The palate experience is defined by the contrast between a sugary, berry-forward initial impression and the classic, underlying lactic acidity of a Lambic. Refreshing and elegant, it delivers a clean, effervescent finish that highlights the authentic fruit essence while maintaining a soft, accessible mouthfeel perfect for dessert pairings.
Appearance. Deep pink to ruby red hue; features a dense, pink-tinted, mousse-like head with excellent retention and lacing. Clarity is generally clear, though a very slight fruit haze may be present.
Aroma. High intensity of fresh, jammy raspberries dominates. Supporting notes include light lactic sourness, subtle earthy funk such as hay or soft barnyard, and a faint hint of vanillin-rich oak from barrel aging. No hop aroma.
Taste. Initial impression is sweet and fruity, bursting with ripe raspberry flavor. A gentle lactic tartness provides necessary balance, preventing the sweetness from becoming cloying. Low to no hop bitterness. The finish is clean and lingering with a persistent berry character and a refreshing, tangy snap.
Mouthfeel. Medium-light body with high, lively carbonation. No alcohol warmth at 4% ABV. Smooth, slightly syrupy texture balanced by a crisp, puckering acidity that leaves the palate refreshed.
