Timber Ales Chasing Darkness V1 is an opulent Imperial Stout that marries the intensity of dark-roasted grains with a decadent infusion of toasted coconut. This 12% ABV powerhouse presents a sensory journey defined by layers of bittersweet chocolate, espresso, and caramelized sugar, elevated by the creamy, nutty sweetness of the coconut. The profile is remarkably complex, balancing the aggressive roast of black malt with a rich, velvety texture. Deep notes of dried plums and figs emerge as it warms, while the toasted coconut provides a smooth, tropical finish that tempers the robust bitterness, resulting in a harmonious and warming dessert-like experience.
Appearance. Opaque jet black (40+ SRM) with a thick, persistent deep tan head that leaves dense lacing. High viscosity is apparent through prominent legs on the glass.
Aroma. High intensity; dominant notes of toasted coconut, dark chocolate, and roasted coffee beans. Underlying layers of black cherry, raisin, and light caramel sweetness are supported by a clean, warming alcohol presence and a hint of vanilla.
Taste. Rich and multifaceted; starts with intense bittersweet chocolate and charred grain, immediately followed by the creamy, nutty flavor of toasted coconut. Mid-palate reveals dark fruit esters like prune and fig. Bitterness is firm but balanced by a lingering malty sweetness. The finish is long, warming, and smooth.
Mouthfeel. Full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate. Noticeable but smooth alcohol warmth provides a comforting glow without any harsh or solventy notes.
