This decadent Imperial Stout presents an opulent sensory journey inspired by a banana split, beginning with a powerful bourbon barrel-aged base. Rich aromas of ripe bananas and Madagascar vanilla beans entwine with deep layers of chocolate provided by cacao nibs and cocoa powder. The addition of milk sugar creates a creamy, dessert-like texture that supports the intense roast and charred oak notes. A distinct nuttiness from walnuts emerges on the finish, balancing the inherent sweetness of the dark malts. At 13.1% ABV, it offers a sophisticated warmth, blending the complexity of a barrel-aged ale with the playful, indulgent profile of a gourmet confection.
Appearance. SRM 40+, jet black and opaque. A persistent, deep tan head with moderate retention. Noticeable viscosity and legs clinging to the glass due to the high alcohol content and residual sugars.
Aroma. High intensity. A complex bouquet of dark chocolate, cocoa, and roasted coffee melds with prominent ripe banana and sweet Madagascar vanilla beans. Significant bourbon influence contributes notes of oak, caramel, and coconut. Subtle earthy nuttiness from walnuts is present.
Taste. Initial impression is intensely sweet and rich. Malt flavors of bittersweet chocolate and espresso are layered with creamy lactose and lush banana. The cacao nibs and cocoa powder provide a deep, authentic chocolate character. Bourbon warmth and vanilla notes are well-integrated. Moderate bitterness is present but largely balanced by residual sweetness. The finish is long, sweet, and nutty with lingering notes of dark fruit and charred oak.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Low to moderate carbonation. A smooth, noticeable alcohol warmth is present but well-integrated, complemented by the creaminess of the milk sugar.
