Adíos Martes is a monumental Imperial Stout that has undergone an extensive three-year transformation in Sherry casks, resulting in a profoundly decadent sensory experience. The aroma is a concentrated blend of bittersweet chocolate and espresso, interlaced with the vinous complexity of raisins, figs, and a hint of oxidized nuttiness from the wood. On the palate, its immense viscosity carries deep layers of dark fruit and molasses, balanced by a firm roasted bitterness. The extended aging produces a smooth yet powerful alcohol presence, finishing with a lingering, warming sweetness reminiscent of fine fortified wine and dark-roasted malts.
Appearance. Jet black and opaque (40+ SRM) with a small, persistent deep tan head. The high alcohol and extreme viscosity are evidenced by prominent legs coating the glass.
Aroma. High intensity; a rich tapestry of dark chocolate, black licorice, and roasted coffee beans. The Sherry cask influence is pronounced, contributing aromas of plum, prune, and a nutty, vinous character. Alcohol is noticeable but smooth and well-integrated without being solventy.
Taste. Initial impression is one of intense malt richness with flavors of dark cocoa, charred grain, and black currants melding with the sweet, wine-like notes of the Sherry casks. Bitterness is medium-high but softened by the massive residual sugar. The finish is long and warming with a lingering dark fruit and roasted aftertaste.
Mouthfeel. Very full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low, and a significant, smooth alcohol warmth is present throughout the experience.
