This DDH Black IPA presents a complex interplay between shadow and light. Dark, roasted malts offer subtle notes of chocolate and cold-brew coffee without any acrid astringency. This backdrop allows the heavy dry-hop additions of Chinook, Talus, Idaho 7, and Citra to shine. Resinous pine from Chinook and Idaho 7 blends with the unique floral, pink grapefruit, and sage-like qualities of Talus. Citra adds a vibrant tropical layer of mango and lime. The result is a clean, hop-forward Specialty IPA that balances firm bitterness with a smooth, dark malt core and a crisp, dry finish.
Appearance. Deep brown to opaque black (38 SRM). Topped with a persistent, creamy light tan head that leaves dense lacing. Clarity is clear, though the depth of color makes it appear opaque.
Aroma. High hop intensity featuring pungent pine and resinous needles, layered with pink grapefruit, tropical mango, and a hint of herbal sage. A restrained malt background provides low notes of cocoa and toasted bread. Clean fermentation profile.
Taste. Initial punch of citrus and piney hops followed by stone fruit and black tea. Malt flavors are supportive, offering smooth chocolate and light roast without burnt or ashy harshness. Medium-high bitterness is firm but clean. Finishes dry with a lingering resinous and slightly roasty aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Moderate carbonation provides a crisp bite. Very light alcohol warmth is well-integrated. No astringency from the dark malts.
