This Wild Specialty Beer presents a vivid, multi-layered sensory journey defined by an explosive tropical and stone fruit bouquet. Dominated by the sharp, electric acidity of Calamansi and the aromatic intensity of Passion fruit, the profile is softened by succulent Apricot and bright Tangerine notes. Despite the pastry-inspired concept, the absence of lactose ensures a clean, fermented character where Rapeseed honey from the TOMIÓD Apiary adds a floral, delicate complexity and a unique depth rather than cloying sugar. It is a vibrant, acidic, and complex fusion of wild fermentation characteristics and orchard-fresh intensity that finishes remarkably crisp.
Appearance. Deep gold to pale orange (SRM 6-8) with a persistent, hazy opacity due to the heavy fruit load. The head is off-white, moderate in height, with fair retention for a sour style, leaving light lacing.
Aroma. High intensity aromatics of fresh passion fruit and zesty calamansi dominate. Significant secondary notes of jammy apricot and tangerine peel follow. The Rapeseed honey provides a distinct floral, meadow-like scent. Very low malt presence; moderate lactic tartness and a hint of wild funk are present, blending seamlessly with the fruit.
Taste. A sharp, clean initial lactic acidity immediately carries flavors of tart passion fruit and citrusy calamansi. Mid-palate reveals the rounder, fleshy sweetness of apricot and tangerine. The Rapeseed honey contributes a subtle floral complexity and aids in balancing the high acidity without adding heavy residual sugar. Hop bitterness is nearly imperceptible. The finish is crisp and dry, with a lingering fruit-skin tartness.
Mouthfeel. Medium-light body with a refreshing, moderate to high carbonation. Despite the 6.8% ABV, alcohol warmth is very well-integrated and subtle. There is a slight, pleasant fruit-tannin astringency that enhances the dry finish.
