Illegal Cargo is a bold Double IPA that celebrates the classic West Coast profile through a modern lens. The aromatic profile is led by the complex interplay of Mosaic and Riwaka, delivering layers of tropical passionfruit and bright citrus alongside the signature dank, piney resonance of Chinook and Columbus. This collaboration between Sudden Death and Bad Seed emphasizes a clean, fermentable base with a touch of wheat for structural integrity. Intense resinous bitterness defines the experience, yet it remains remarkably drinkable with a crisp, dry finish. It is a potent, hop-forward showcase where pine-forest notes meet exotic fruit, supported by a subtle, grainy malt backdrop.
Appearance. Gold to light copper in color (SRM 7-9). Features a moderate-sized, persistent, off-white head with excellent lacing. Clarity is good, though a very slight haze from heavy dry-hopping is acceptable.
Aroma. High intensity hop aroma featuring a complex blend of pine, resin, and spice from Chinook and Columbus, alongside tropical fruit, blueberry, and citrus notes driven by Mosaic and Riwaka. Malt is neutral and supportive in the background, showing a light crackery character. Fermentation is very clean with no notable esters.
Taste. Dominated by intense hop flavors of grapefruit rind, pine needles, and tropical mango. Bitterness is firm and moderately high (70 IBU) but lacks harshness. The malt presence is low and unobtrusive, providing a clean, grainy platform for the hops. The finish is remarkably dry and crisp with a long-lingering resinous and citrusy aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture from hop resins. Carbonation is medium-high, providing a lively scrub on the palate. A subtle, well-integrated alcohol warmth is present without being solventy. No hop-derived astringency.
