The obvious answer was to give our friend Henok from Omnipollo a ring and ask if he fancied helping us conjure something up. After almost 2 years of aging we decided it was time to take out the beer and lightly enhance it with coconut, hazelnut and vanilla so as to not get too much in the way of the barrel character.
