Stewart’s latest sour from their Project 7 series of limited editions is inspired by the Gooseberry & Elderflower Gin Fizz cocktail – tart and refreshing with a sweet floral finish. A base of lager and wheat malt has been soured with Lactobacillus plantarum yeast and fermented with gooseberry juice, elderflowers and juniper berries. It was then co-fermented with saison and champagne yeast strains for a dry yet complex finish.
