Skøllmann Burning Skoll is a vibrant Saison that marries traditional farmhouse character with modern botanical and hop accents. The grist, featuring spelt and wheat, provides a rustic, grainy foundation for the expressive yeast profile. The aromatic Huell Melon hops introduce distinct notes of ripe honeydew and strawberry, which intertwine seamlessly with the pungent, zesty warmth of fresh ginger. This golden ale balances its complex esters and spicy phenols with a firm, dry bitterness and a crisp, highly attenuated finish. The result is a refreshing yet potent interpretation of the style, where the ginger enhances the yeast's natural peppery spice.

Appearance. Golden yellow (approx. 6 SRM) with a slight haze from the wheat and spelt protein. Displays a long-lasting, dense, rocky white head with excellent Belgian lace and high effervescence.

Aroma. High intensity with a complex blend of honeydew melon and strawberry from Huell Melon hops, combined with the zesty, sharp aroma of fresh ginger. Peppery yeast phenols and citrusy esters are prominent, supported by a light, grainy malt character.

Taste. Initial grainy-sweet malt flavors from the wheat and spelt quickly give way to fruit-forward notes of melon and pear. The middle palate features a subtle but clear ginger heat and peppery spice. It possesses a moderate to high bitterness that, combined with very high attenuation, results in a bone-dry, crisp finish and a lingering spicy-bitter aftertaste.

Mouthfeel. Medium-light body with very high, prickly carbonation that provides an effervescent quality. A light, well-integrated alcohol warmth is present, consistent with its 7% strength, without any harsh astringency.
