The Devilish Charmer is a sophisticated Belgian Single that balances an aggressive yeast character with a lean, pale malt structure. Aromas of peppery phenols and floral Continental hops lead the sensory experience, supported by a delicate, honeyed cracker-like backdrop from Pilsner malt. On the palate, a crisp, initial graininess transitions into a complex interplay of stone fruit esters and clove-like spice. The finish is notably dry and effervescent, leaving a lingering peppery and floral impression. While slightly stronger than traditional examples, its high attenuation ensures a refreshing, hoppy monastic character that highlights its Trappist inspiration with a bright, clean, and lively profile.
Appearance. Pale gold (4 SRM) with brilliant clarity. Features a large, billowy, and persistent white head that leaves significant lacing on the glass.
Aroma. Moderate-high intensity. Dominant peppery phenols and spicy-floral hop notes. Subdued malt presence of crackery and bready notes with a hint of honey. Fruity esters of pear and orange are present.
Taste. Initial flavor of honeyed biscuit and light bready malt. Moderate bitterness emerges quickly, accentuated by a very dry finish. Mid-palate reveals floral hops and black pepper phenols. The aftertaste is clean, featuring a lingering fruity and spicy yeast character.
Mouthfeel. Medium-light body with a smooth texture. High carbonation provides a prickly, effervescent sensation. A very subtle hint of alcohol warmth is present given the slightly elevated ABV.
